I’ve never tried chia seeds until yesterday. I had been eager to find out what they are like and to see if I like them enough to start using in recipes, especially puddings since I miss having a comfort food that’s easy to make.
For my first attempt, I made a simple chia pudding with strawberries instead of just coconut milk. The result, I must say is delicious and quite filling. I may be experimenting with these seeds (at least enough to use up the package I purchased)… although in moderation, as there are controversial views on whether or not to include them in our Paleo/Primal diets on a regular basis. - 1 cup strawberry puree (about 20 medium strawberries)
- Juice of 1 lime
- 1/2 cup coconut milk
- 1/4 cup chia seeds
- Place the strawberries in a blender and puree.
- Add the lime juice and coconut milk and blend well.
- Pour into a glass container and add the chia seeds.
- Stir to mix well.
- Refrigerate for a few hours or overnight, long enough for the seeds to absorb the liquids and create a gel.
- Stir before eating.

I recently found out I’m gluten & dairy intolerant aswell as a list of other foods including eggs & oats. I’ve been reading a lot about the Paleo diet the past couple of days & it seems like something that could work for me given my intoletances.
Can you please recommend a high protein Paleo breakfast that I could try, that doesn’t use eggs?!

First of all, thank you for stopping by. And I’m sorry to hear you have a list of intolerances and allergies. (I’m allergic to oats as well.) Paleo is a great diet for health, and it’s a bit different for all of us depending on what we can or cannot eat, plus what we like of course. I personally love eggs. But there are so many things you can do for breakfast, such as my garlic shrimp stuffed avocado, which is full of healthy fats and protein. I also love to eat leftovers from dinner as breakfast. It’s a quick and easy way to get all the delicious nutrients of a meal and not have to cook! 😉 I have some more ideas on my recipe page, please take a look there.
